Clean, rinse and cut the peppers into tender strips. Clean the spring onions, rinse and chop into thin rings.

Dip the tomatoes briefly in hot water, peel, halve, quarter and remove the seeds with a teaspoon. Cut the flesh into small cubes.

Select the spinach, rinse and cut into strips. Clean and slice the mushrooms. Break the eggs in a baking bowl, whip with the whipping cream and the soy sauce with the help of a whisk until creamy. Season with pepper and salt.

Heat the butter in a wok, pour in the peppers as well as the spring onions and cook for 2 minutes, stirring constantly. Then remove. Add the vegetables to the egg mixture. As soon as the egg mixture sets, remove the wok from the heat, stir briefly with two chopsticks and bring to the table on a heated plate.
