For the egg noodles with vegetables, cook the noodles according to package directions, strain and set aside. Cut the vegetables, shred the meat.

Heat oil in a wok and fry the meat until crispy. Lift out of the pan and in the remaining oil, first sauté the carrots.

Then add the rest of the vegetables, season with the spices, soy sauce, salt and pepper and let it fry for a bit.

Then add the noodles and meat, season with sambal olek and mix everything together well.
