For the egg owls, first hard boil the eggs and quench. Let cool, peel and cut in half lengthwise.

Peel and finely chop the onion. Carefully separate the egg yolks from the eggs and place in a bowl. Add the onion, mayonnaise, mustard and salt. Stir well. Pour the mixture back into the bulges of the egg yolks.

Cut the olives into rings. Cut down a slice of the carrot and cut small triangles from it for the beaks.

Place the olive rings as eyes on the eggs. Place the carrot underneath as the beak. Place a parsley leaf on each side as wings on the egg owls.
