Instructions:

Mix the cooled potato quantity with flour and a pinch of salt – preferably with your hands – and knead until the quantity becomes “crumbly”.

Melt clarified butter in a hot frying pan and pour in the raw sterz. Now please do not leave the sterz in the hot frying pan! Fry for a short time before turning for the first time. Then tear the Sterz into fine pieces similar to the Kaiserschmarr’n.

Put the fried Sterz in a greased dish, add a few spoonfuls of sour cream and put it in the oven at 175 degrees.

After 15 minutes, the sausage has completely absorbed the sour cream and is ready to serve.

The Sterz tastes – not only the Waldler – best with sauerkraut or sour milk.

Tip: Instead of clarified butter, you can also use butter in most cases.
