For the fennel-apple cake, first prepare the sponge dough. To do this, beat the eggs, powdered sugar and vanilla sugar until foamy and fold in the flour. Scrape out the vanilla pod and mix into the batter.

Pour the mixture into a well greased and floured springform pan. Cut the apples and fennel into slices and cover the mixture with them.

Bake the fennel-apple cake in the oven (hot air) at 180°C for about 30 minutes.
