For the fig jam with pears, peel and core the pears.

Thinly peel the peel from one third of the oranges and chop finely. Now peel and core all the oranges, cut the flesh into fine slices.

Roughly dice the figs and pears and place in a saucepan with the oranges. Add vanilla pod, orange zest, red wine and preserving sugar. Bring slowly to a boil, stirring frequently.

Simmer over low heat for 3 to 4 minutes. Remove the vanilla pod and pour the fig jam with pears into clean, preheated jars. Seal immediately.
