Instructions:

Mix feta cubes, a pepper, egg, salt and a little mustard and form into balls. Wrap each of the balls with a slice of ham. Sauté in olive oil and add a flake of butter and a clove of garlic. Slice the melanzani lengthwise, flour them, sauté in olive oil with the halved chicory and season heavily with salt and freshly ground pepper. Cut the potatoes into thin slices, fry in deep fat until done and season with salt.

For the sauce, sauté the sliced morels and the remaining onion cubes in olive oil, deglaze with white wine and clear soup, fold in whipped cream and refine with sufficient chives.

Our tip: Fresh chives are much more aromatic than dried ones!
