Roll out the puff pastry on a floured work surface, not too thin, and cut out round circles of about 10 cm ø. Grease the outside of a porcelain cup without a handle with butter, turn it upside down and place a round piece of dough over it. Lightly press the dough against the cup to smooth it out. If you have a microwave oven, you can now put the cup in and fluff up the dough for no more than 60 seconds on the highest setting (be careful, the puff pastry burns quickly). But also in the heated oven at 220 °C (hot air 200 °C ) the dough becomes a puff pastry nest in 5-10 min. Carefully remove the nest from the cup, place it straight on top (so that it does not tip over) and cool. In the meantime, make the next nest. If more than one nest is baked at the same time, the microwave run time will increase. For the stuffing, break the cauliflower into clear roses and rinse. Remove the skin from the carrots and cut them lengthwise into narrow strips. Clean the zucchini, rinse and cut into slices. Cut out small mushrooms with a cookie cutter. Steam the vegetables in the vegetable soup for about 5 minutes until soft, then transfer to a sieve and drain well. Keep the vegetable soup for the sauces. Return the vegetables to the pot and keep warm.
