For the gratinated salmon fillet, acidify the salmon fillets with lemon juice. Peel and dice the onion.

Wash spinach with cold water. Heat butter in a pot and fry onions in it until golden. Add spinach and let it collapse. Line a baking dish with the spinach leaves. Place the fish fillets on top.

Mix fish sauce with whipped cream and chopped parsley. Pour over the fish fillets and bake in the preheated oven at 200 °C for approx. 25 minutes. Arrange the gratinated salmon fillets on warmed plates and serve immediately.
