For the fish loaf, cut the fish fillet (you can also use other types such as pike-perch, plaice,…) into small pieces. Season the fish mash with salt and pepper. The salt keeps the moisture together better and prevents the porridge from falling apart.

Stir together the eggs, flour, milk and oatmeal. Then mix with the fish farce. Let the mixture sit for a few minutes so the oatmeal can better soak up the moisture.

Form loaves to desired size and fry in hot oil. Do not turn too soon, the loaves must first get a good frying crust and be firm.

For the parsley sauce, pour the whipping cream into a saucepan and stir in the egg yolks, bring to a boil. Lower the heat and simmer for about 5 minutes, stirring constantly.

Add the butter, season with salt and pepper. Once the sauce has thickened, add the finely chopped parsley, warm the sauce well.
