Bring water to a boil. Select spinach. Wash and blanch in salted water for 7 to 8 minutes. Remove from water with a skimmer.
Grease small ramekins. Add spinach. Add anchovy butter on top, melt. Crack an egg over each. Season with salt, pepper and nutmeg. Pour whipped cream over and sprinkle with grated parmesan cheese. Place in the heated oven on the middle shelf. Baking time: 15 min
