Instructions:

For the Florentine tartlets, make a shortcrust pastry from the ingredients for the dough, chill, roll out to a thickness of approx. 3 mm, cut out round cookies and pre-bake on a baking tray lined with parchment paper at 220 °C for approx. 10 minutes.

For the topping, heat the vanilla sugar, butter, sugar and honey until lightly browned.

Add the whipped cream and stir until the sugar is dissolved. Next, add the split almonds, hazelnut kernels (and the voucher cherries) and cook until the mixture is thickened. Add the rum flavoring at the end.

Spread the mixture evenly over the pre-baked cookies using 2 teaspoons and bake at 200 °C for another 10 to 12 minutes.

After cooling, coat the bottom of the Florentine tartlets with chocolate icing (dark cooking chocolate).
