First prepare the gnocchi: Boil whole, unpeeled potatoes in salted water. Mash the cooked potatoes and let them cool. To the mashed potatoes add 1 egg, salt, oil and flour. Knead the dough. Bring salted water to a boil in a large pot. Cut the well kneaded dough into even pieces, which are then rolled out on the floured surface to make an evenly shaped dough snake. Cut the dough snake into evenly shaped gnocchi. Cook the gnocchi in bubbling water until they rise, about 10 minutes. Meanwhile, prepare the foal steaks: Salt and pepper steaks and stick a sprig of rosemary in each piece. Heat olive oil, sear steaks very hot on both sides for half a minute each. Slightly cut garlic cloves and fry as well. Place the pan with the steaks in the oven preheated to 190°C and cook the steaks for another 4 to 8 minutes, depending on the desired cooking point. Remove the rosemary sprigs and garlic and arrange the steaks. Boil off the gravy with some soup, thicken with pieces of ice-cold butter and pour over the steaks.
