Instructions:

For a baking dish up to 50 cm ø.

For the dough:

Mix flour with 50 ml of olive oil and knead together. Add enough water to make a smooth dough. Shape into a ball, wrap in a plastic bag and rest a little bit 1 hour.

Now knead the dough heartily for a few minutes, shape into two balls and rest another time for 5 minutes. Roll out one portion of dough thinly with a pasta walker, carefully using your hands to stretch it out as thinly as possible in all directions. Preheat oven to highest setting.

Line a well-greased round baking pan, as large as possible, with the dough sheet. Or use a regular baking sheet instead.

Cut goat cheese into cubes and spread evenly on the dough. Cover with the second sheet of dough, spread just as thin, pressing edges smooth. With the tip of your finger, make thumb-sized indentations in some places, sprinkle the surface of the dough with salt, drizzle with the remaining oil. Spread the oil evenly over the dough with the palm of your hand. Gently crush the casesticks in the process.

Place in a very hot oven for a little bit 10 min. until the surface is nicely browned. Cut into large pieces and bring to the table on the spot.
