For green beans au gratin, wash the green beans and remove the stem ends. Cut the tomatoes into cubes. Quarter shallots and cook in oil at moderate temperature until translucent.

Add the green beans. Cook briefly, extinguish with wine and add the stock. Steam at medium temperature in closed saucepan for ten minutes.

Remove the stones from the olives and put them in a baking dish with the tomatoes and the green beans. Place the mozzarella slices in a flaky pattern on top.

Bake in oven at 225° Celsius until cheese is melted and nicely browned.

Serve the green beans au gratin with potatoes or white bread.
