Fried Apple Slices with Mulled Wine Chocolate Sauce

Instructions:

For the sauce, lightly caramelize the confectioners’ sugar in a frying pan at low temperature. Extinguish with the red wine and boil to two thirds. Add the cinnamon, star anise, vanilla pod, cardamom pods, lemon and orange zest and ginger. Add the butter and the chocolate to the sauce form and let it melt in it. Remove the spices and the peels again after three to five minutes.

For the apple wedges, rinse the apples, quarter them, remove the cores and cut the flesh into narrow wedges. In another frying pan, fry the slices briefly in the butter on both sides at a low temperature and remove from the heat.

For the sour cream foam, put the milk, whipped cream, sour cream, a few squirts of juice from a lemon and the sugar in a tall mixing bowl form and mix with a hand mixer.

To serve, arrange the mulled wine sauce on heated deep plates and evenly distribute the apple slices on top. Briefly foam the sour cream again with the hand mixer, drizzle over the top and garnish with mint or lemon balm leaves to taste.

Tip: Cook only with high-quality spices – they are the be-all and end-all of a good dish!
