Drain mozzarella and cut into ½ cm thick slices. Cover half of the bread slices with the cheese, but not all the way to the edge. Place the remaining bread slices on top. Dip the edges of the bread briefly in water and press together well. Whisk the eggs with the milk, salt, pepper in a deep dish. Pour the flour into a second plate. Dip the bread first in the egg mixture then in the flour. Heat the olive oil in a frying pan. Place the stuffed breads in the pan and fry for about 4 minutes per side over medium heat until nicely browned. While doing this, gently press them together with the spatula every now and then to keep the layers together. Serve the breads hot.
