Wash the inside of the ready-to-cook (gutted) char well and pat the inside of the belly dry with some kitchen paper. Season inside and out with salt, pepper and, if desired, lemon juice. Dredge the char in flour. Heat a little oil in a coated frying pan, add chars and fry on both sides for a total of about 12-15 minutes until golden brown. Remove and serve on warmed plates. recommended accompaniments: parsley potatoes, lettuce and garlic butter.
