For the fried chicken salad, cut the chicken breasts into 3 cm pieces. Season with salt, pepper and lemon juice, rub with chopped parsley. To coat, first roll in flour, then pull through beaten egg and then turn in breadcrumbs. Heat oil in a pan (approx. 150°C) and fry the fried chicken pieces for approx. 7 minutes. Remove and drain on kitchen paper.

Meanwhile, for the dressing, mix the sherry vinegar with oil and mustard. Season to taste with salt, pepper and powdered sugar. Marinate the cleaned lettuce with the dressing and arrange on plates. Place the fried chicken pieces on top. Garnish the fried chicken salad with cherry tomatoes.
