Instructions:

Remove large veins and tendons from the goose liver (you can use other poultry livers just as well). Remove the skin from the onions and cut them into very fine cubes. Cut the tomatoes crosswise with a kitchen knife, dip them briefly into boiling water, remove the skin, cut them in half, remove the seeds and cut them into fine cubes.

Then fry the liver slices, seasoned with salt and pepper, in a hot frying pan with a little cooking oil for about a minute on each side, then add the onions. Sauté briefly, then add the diced tomatoes, the mushroom slices and the chive rolls. Sauté briefly, then extinguish with balsamic vinegar and season with salt and pepper.

Mix the already prepared red cabbage with the morello cherries. Cut the cooled potato dumplings into slices and fry them in butter on both sides. Season with salt and pepper.
