For the fried noodles, prepare the noodles according to the package instructions. Cut the leek, carrot, bell pepper and mushrooms into fine strips or slices. Cut the broccoli into small florets and drain the mungoke sprouts (if you like, you can of course buy them fresh).

Heat the oil and fry the vegetables a little at a time – add the bean sprouts last. Meanwhile, fry the eggs in another pan and scramble.

Mix the noodles and eggs well with the vegetables and continue to fry – season with soy sauce, salt and pepper. If you want the fried noodles with meat, you can simply cut it into strips and add salt and pepper.

Heat 1 tablespoon of sesame oil in a wok pan and sear the meat – remove and mix into the noodles.
