Clean and peel the radish and cut into sticks about 1/2 cm thick. Place the sticks in a suitable bowl. Add the su. Marinate the radish for about 1 hour with the lid closed.

In the meantime, remove the skin from the garlic and chop it finely. Clean and rinse the spring onions, cut them in half lengthwise, about 4 cm long.

Drain the radish. Heat the oil strongly in a frying pan. Roast the garlic in it until golden. Add the radish and the spring onions and fry for 2 minutes. Stir in the soy sauce, salt and sugar. Push the vegetables to the edge of the pan.

In the empty space of the frying pan, crack the eggs, stir through and set. Roughly break up the solid egg mixture. Mix the eggs with the vegetables. Fold in the chives.
