Instructions:

*Flash fried Squid w/ Horseradish Gremolata and Lemon Aioli.

For the gremolata, stir together all ingredients, set aside. Stir through flour and spices, set aside. Heat frying oil, about 5 cm high, to 190 °C ( 375 F ). Dry squid, mix with flour in a baking dish, stand 1 min. In a sieve, shake off excess flour. Fry in oil until golden, about 1 to 3 min, perhaps in several batches. Drain on paper towels, keep warm until fried. Bring oil to heat repeatedly each time.

To serve, place on plates, season with s+p and sprinkle gremolata over. Lemon aioli with on the table form.

It goes great with a spinach and pear leaf salad with curry cashews.
