Instructions:

For the fried trout with steamed parsley potatoes, wash the gutted trout well. Rub inside and out with fish seasoning and salt and turn in breadcrumbs.

Heat clarified butter in a fish pan, put the trout and fry slowly on both sides. Peel and quarter the potatoes, put them in a pot, add salt and some caraway seeds and cover only the bottom of the pot with water.

Cover and steam slowly until they are soft. Then add the butter and chopped parsley, stir briefly and arrange on a plate with the trout. Garnish the fried trout with steamed parsley potatoes with lemon slices.
