For the frozen yogurt, place the yogurt in a strainer lined with paper towels and let it drain over a bowl for at least 6 hours.

It is best to cover with plastic wrap and place a small plate on top to weigh it down.

Beat the egg whites with the vanilla sugar until stiff. Mix the yogurt mixture with the sugar and fold in the stiffly beaten egg whites.

Freeze in the ice cream maker. Serve the frozen yogurt with any topping.
