For the gingerbread pancake, first separate the eggs. Whisk egg yolks with powdered sugar, vanilla bean pulp and gingerbread spice.

Add milk and flour and stir until a lump-free dough is formed. Let it rest for a while.

In the meantime, beat egg whites with a pinch of salt until stiff.

Stir a small amount of the whipped cream into the gingerbread pancake batter until well combined, then gently fold in the rest.

In a large, shallow pan, melt the butter and pour in the batter.

Let the gingerbread pancake stick to the bottom over medium heat for a few minutes, until the underside gets a good color.

Now turn the pancake over, and it can break up into larger pieces. Let the second side brown as well. Then tear the gingerbread pancake into pieces with two forks.

Mix granulated sugar and a little gingerbread spice and sprinkle over the pancake. Leave in the hot pan for some more time so that the sugar caramelizes slightly.
