Finely dice the goat cheese. Blanch and skin the tomatoes, dice the flesh. Also dice the shallot and radishes, cut the chives into rolls. Mix everything carefully, season strongly with salt and freshly ground pepper and drizzle with olive oil, put to cool.

Peel the potatoes and grate finely on a rösti grater. Season the potato mixture lightly with salt and pepper. In a frying pan, fry the potato mixture in hot oil until crispy.

Pile the goat cheese on the hot Rösti and bring it to the table on the spot.

Tip: Serve with a leaf salad with Italian olive oil vinaigrette.

Our tip: Always use fresh chives if possible!
