An asparagus recipe for gourmets:

1. rinse the asparagus spears, dab them dry and peel the lower third.

Cook for 10 minutes in boiling salted water to which sugar and butter have been added. Remove and drain well.

Grease a large gratin dish or 4 small serving dishes with a small amount of light butter and pour in the ham.

Cut the asparagus lengthwise into pieces and distribute the asparagus sections evenly in the gratin dish or molds. Keep a few asparagus heads for decoration.

Mix the whipped cream with a little asparagus broth, the grated cheese and the egg yolk, season with bell pepper, salt and paprika and pour over the asparagus spears.

6. gratinate the asparagus in the heated oven (250 °C) for about 8 to 10 minutes.

Serve with roasted meat and new potatoes.
