Instructions:

Beat the eggs with the Parmesan cheese. Peel and clean the potatoes, grate finely and mix well with a tablespoon of parsley and the potato starch. Season with salt, pepper and nutmeg. Flour the meat, pull it through the cheese mixture and fry it in hot olive oil on both sides until golden brown.

Heat a frying pan with olive oil, insert small bunches of the potato mixture, press a little flat and fry until golden on both sides. Cook the tomatoes in the same frying pan and season a little. Heat two tablespoons of olive oil, stir in chervil, parsley and lemon thyme. Arrange the meat on deep plates, center the tomatoes and arrange the hash browns next to them. Drizzle the herb oil over the meat.
