Pasta dishes are always a good idea!

Rinse the wild garlic, remove the stems, dry the leaves and chop finely. Grind in portions with about 100g of haze in the cuttr.

Combine with the remaining haze, eggs and water to make a soft, smooth dough. Form into a plastic bag, seal tightly and rest in the refrigerator for one night.

Turn the dough through the pasta machine in batches, with smaller and smaller roller spacing. Cut the dough bands into fine or wide noodles with the special attachment. Use immediately or lay out on a dish rack to dry.

Variations: Instead of fresh wild garlic use wild garlic paste (sep. recipe): per 100 g haze/flour about 10 g. Dumpling dough can be seasoned and colored in the same way.
