For the grilled chicken breast with asparagus and mango-lime salsa, first prepare the mango salsa. Peel the mango and cut into small cubes, deseed the chili and chop finely.

Cut the cilantro with the stems into fine strips. Season the mango with salt, sugar, lime juice and lime zest. Let steep for 10 minutes, then stir in the chili and cilantro and season again.

Salt and pepper the chicken breasts and sear them in a hot grill pan until hot all over and finish cooking in the oven.

Peel the asparagus and cook in the salt and sugar water until al dente, then rinse in cold water. Pat dry and fry in a grill pan, season with salt and pepper and serve with the chicken breast.
