Cut open the fish from the dealer and gut it. Rinse at home, rub with salt, pepper and olive oil. Place with the inside on the oiled grill bars and grill until crispy. Drizzle with olive oil on plate and sprinkle generously with parsley.

Note: Sea shark is the Italian name of this fish, it is also called lucerna. In our country it is not so rare to find it in fish stores. It looks quite appetizing with its pretty red skin and tastes delicious.
