Grilled Smoked Trout with Fennel and Celery Stalks

For the grilled smoked trout, remove the skin from the trout fillets. Place 4 pieces of aluminum foil on the work surface. Drizzle a little olive oil over them. Place 1 trout fillet on each piece of aluminum foil.

Wash the fennel bulb and remove the outer leaves. Set the fennel greens aside. In a saucepan, bring lightly salted water to a boil and gently simmer the fennel bulb in it for about 4 minutes. Remove and cut into slices. Wash the celery and cut into inch-long slices. Leave out the woody ends. Rinse the limes in cold water, rub dry and also cut into slices.

Top the fish fillets with the lime, celery and fennel slices. Season with coarsely chopped fennel greens, salt and white pepper. Now fold the aluminum foil over the fish and press the ends tightly.

Place the wrapped fish, fish side down, on the hot grill. Grill for 8 minutes. When unwrapping the fish, make sure the fish side is down.
