Instructions:

Sauté the onion in butter, cut the mushrooms into slices and fry them. Add lemon juice and salt, dust with flour and pour in whipped cream. Bring to the boil and season again with salt, pepper and nutmeg. Allow to cool, stir in egg yolks, puree with a blender and add whipped cream. Bring beef broth, white wine and vermouth to a boil and let ham steep briefly. Arrange on ovenproof plates, pour over mushroom cream and sprinkle with grated cheese. Spread some butter flakes on top and bake in the oven at 250°C.
