For the pumpkin spinach strudel, preheat the oven to 180-200 degrees hot air. Remove the puff pastry from the refrigerator.

Peel and roughly grate the pumpkin and carrots. Then chop the onion and sauté. Defrost the spinach. Mix all ingredients (except the ham) in a bowl. Use enough salt.

Roll out the puff pastry, line with ham and put the filling on top. Sprinkle some more salt and chili powder on top. Roll up and brush with the egg.

Poke a few holes in the dough and bake the pumpkin spinach strudel at 180-200 degrees hot air.
