For the herb omelet, beat the eggs, add the milk and whisk. Wash parsley, dill, chives and chervil, chop finely and mix into the mixture.

Season with nutmeg, salt and pepper. Heat the oil in a frying pan, pour in the mixture and fry the omelette until golden brown.

Cut into quarters and serve the herb omelet topped with smoked salmon and garnished with basil.
