For herb potatoes, wash potatoes and cook in hot water for about 20-30 minutes, depending on the size of the potatoes. Drain potatoes, rinse, peel and cut into bite-sized cubes.
Heat oil in a frying pan. Fry potatoes until brown.
Cut dried tomatoes into small pieces and fry for about 5 minutes.
Wash herbs. Remove leaves or needles, except for a little bit for garnish, and chop coarsely. Add to potatoes and season with salt and pepper.
Pour everything into a gratin dish and sprinkle with cheese.
Grill under the grill of the oven for about 5 minutes until the cheese starts to melt.
Decorate the herb potatoes with fresh herbs.
