Instructions:

For the herring sauce, chop anchovies very finely and fry in hot butter. Deglaze with a splash of red wine, stir and pour in the basic brown sauce.

Stir well and cook very slowly for about 1/2 hour. Season to taste.

Add finely chopped herring and parsley to the herring sauce.
