Instructions:

Soak gelatin in sufficient cold water. Preparation with agar-agar please follow the instructions on the package!

Pour boiling hot water (2) over blossoms and infuse for 5 min. Drain blossoms, add sugar and juice of one lemon except for the mass (1), to the tea form. Let gelatin melt in it. Gel hibiscus tea in the refrigerator. As soon as the jelly begins to set, whip whipped cream until stiff and stir in.

Chill the cream for about 4 hours. Remove seeds from dates, cut into quarters. Chop strawberries. Mix juice of one lemon (1) and honey, arrange fruit on plates and drizzle with it.

Roast pistachios and pine nuts until golden brown. Make dumplings of the mousse with a tablespoon dipped in hot water and arrange on the fruit. Garnish with lemon balm and nuts.
