Sift the flour onto a smooth surface. Press an indentation in the center and slide the eggs into it.

Add the salt, water and olive oil.

Using a fork, mix the eggs with the salt, water and oil, stirring in a little of the flour.

Mix in the flour from the edges and knead in a little at a time. If the dough is too firm, add a little more water.

Knead the dough for about 10 minutes, flatten with the heel of your hand, fold and flatten again until the dough is smooth, shiny and elastic.

Cover and let rest for 1 to 2 hours, then work as desired. Roll out the dough as thinly as possible on a floured board and cut into strips about 5 inches wide.

Put the strips through the pasta machine, first through the widest roller setting, then back off gradually.
