For the honey-mustard sauce with dill, first put the yogurt, mustard, honey, lemon juice, balsamic vinegar, sunflower oil and the garlic clove in a tall, narrow container and blend with a hand blender until creamy.
Finely chop the dill and crush the pepper in a mortar and fold into the sauce.
Season with salt and, if necessary (for those who find the sauce too sweet), with lemon juice or vinegar.
