The quantities are each according to appetite for 2-4 servings.

Make potatoes unpeeled, peel and cool. Cut the bacon and onion into cubes and sauté in fat. Add the diced potatoes, pieces of roast and ham and fry well, turning frequently. Beat the eggs, season with salt and nutmeg, add the parsley, pour over the pan contents and fry.

Serve hot from the frying pan.

It goes excellently with green leaf salad.

Tip: Always use an aromatic ham, it will give your dish a wonderful touch!
