Instructions:

Separate the eggs. Mix flour, yolks, milk, salt and pepper with a whisk to a smooth dough, add cheese. Beat egg whites until creamy and fold in. Heat butter in a frying pan, pour in dough, bake briefly and finish in a heated oven at 160 °C for about 10-12 minutes. Turn the Schmarren on the other side, divide into pieces, arrange on plates and sprinkle with grated cheese as desired.

Cut apple in half, core and cut into tender strips. Marinate with oil and juice of one lemon, sprinkle with walnuts.
