Separate 3 eggs. Stir the flour, egg yolks, sugar, milk and a + pinch of salt well in a baking bowl for ten minutes.

Beat the egg whites with a whisk or a hand mixer until stiff egg whites are formed. Then carefully stir the beaten egg whites into the batter. Heat 50 g butter in an iron frying pan. Pour the dough into the frying pan and bake until crispy on one side, tearing it into larger pieces with two forks when turning and baking until golden brown. Baking must be done quickly, otherwise the dough will become leathery. Finally, dust with powdered sugar.
