Stir together milk and flour. Add sugar, lemon zest, vanilla pulp, rum and raisins and stir until well combined.
Gently fold in the whole eggs with a whisk.
Heat butter in a pan, pour in the batter, cover and let it slowly set on the stove.
Then turn and tear into pieces with the help of two forks.
Add a little sugar and butter to the pan, lightly caramelize the whole thing and serve immediately.
For the apple compote, caramelize the sugar in a saucepan.
Put all the ingredients in a saucepan and bring to the boil until the sugar has dissolved. Steam the apple slices in it until soft and serve with the Kaiserschmarrn.
