Instructions:

For the Kaiserschmarrn with apricot compote, first stir flour with milk until smooth and add yolks and vanilla flavoring.

Beat egg whites with salt and sugar until stiff, fold in and add raisins.

Pour the batter into the greased frying pan to the thickness of a finger, bake on both sides, crumble and sprinkle with powdered sugar and caramelize a tiny bit.

For the apricot compote, cut the apricots in half, remove the seeds and bring to the boil together with white wine, a little water, star anise and sugar and infuse until the apricots are cooked.

Arrange the Kaiserschmarrn on a plate, sprinkle with powdered sugar and offer apricot compote with it.
