Kaiserschmarrn with Caramelized Apples and Vanilla Ice Cream

Instructions:

For the ice cream, bring milk, sugar, whipping cream and vanilla to a boil. Whip the egg yolks in a baking bowl over a bain-marie. Add the hot whipped cream-milk mixture and strain to a rose. Add the alcohol and freeze in the ice cream maker. For the Kaiserschmarrn, whip the egg whites with the sugar until stiff. Beat the remaining ingredients until smooth, then carefully fold the whites into the batter a little at a time. Pour the mixture into a coated frying pan and bake for 12 minutes at 180 °C convection oven. In the meantime, caramelize the apple slices with butter and sugar. Divide the baked Kaiserschmarrn with two forks into coarse pieces and dust with powdered sugar. Arrange apples, Kaiserschmarrn and vanilla ice cream on plates.
