Kaiserschmarrn with Fresh Fruit

Form the raisins in a mug, blanch (scald) with boiling hot water, infuse a few min, then pour off. Pour the rum over them and let them swell or, if you want to omit the rum, let them swell in the water.

Whip the egg whites with the salt until stiff.

Stir the yolks with the honey, milk and flour in a saucepan. Allow to swell for 15 minutes.

In the meantime, rinse and dry the fruit, remove the seeds and peel the bananas. Cut the fruit into small pieces.

Add the snow to the dough mixture form and fold in carefully.

If possible, foam the butter in 2 frying pans at the same time. Pour in the dough. Spread the soaked raisins and half of the fruit evenly on top. Bake the pancakes over medium heat for 2-3 minutes, shaking the frying pan several times.

Now cut the pancakes into pieces with 2 forks. Turn off the stove and cook the Kaiserschmarrn with the lid closed for 1-2 minutes on the still warm plate.

Arrange the Kaiserschmarrn and sprinkle with the remaining fresh fruit.

Tip: Always use an aromatic ham, it will give your dish a wonderful touch!
