A delicious mushroom dish for any occasion!

Stir the ingredients for the marinade well, coat the roast all over and let it sit for a few hours. Then lightly dry the meat with kitchen roll and place it in the roasting pan.

Heat the oil or clarified butter in a small pan, pour it over the meat(*) and put the roasting pan in the oven heated to 220 degrees. Meanwhile, lightly brown the meat for about twenty minutes, then reduce the temperature to 180 degrees and brush the roast with the remaining marinade.

Pour white wine to the meat after thirty minutes of roasting.

Mix the mushrooms with the juice of one lemon, season with pepper, place the mushrooms around the meat.

Roasting time after browning: Fifty to sixty min.

The roast is done when the juice comes out clearly when pierced. Cooking test with a meat thermometer: 85 degrees .

Sprinkle chives over the carved roast.

(*) The roast can also be browned in the roasting pan on the kitchen stove and finished in the oven at 180 degrees.
