Instructions:

For the kletzenbrot, first boil kletzen covered with water and simmer for about 15 minutes. Add dried plums and soak overnight.

Strain, but keep the soaking water.

Dissolve yeast with sugar in some soaking water. Let this mixture rise in a warm place for about 15 minutes until bubbles form.

In the meantime, line a baking sheet with baking paper.

Then knead in some more soaking water as well as flour and sugar.

Knead in the remaining ingredients (without the soaking water). Shape the dough into a loaf. Place on the baking sheet and cover with a clean dish towel. Let rise for another 30 minutes.

Meanwhile, preheat the oven to 200 °C.

Bake the Kletzenbrot for about 35 minutes in the middle of the oven.

Mix cornstarch with the remaining soaking water and brush the Kletzenbrot with it after baking.

Garnish with almonds.
